Terriyaki Twist Stir Fry With Noodles

Looking for a quick and delicious dinner option after a long day? This whole food plant-based stir fry with rice noodles is packed with flavor and ready in just 30 minutes! It's perfect for those nights when you get home late but still want a wholesome, satisfying meal. Loaded with colorful veggies, a savory sauce, and tender rice noodles, this stir fry is as nourishing as it is tasty. Plus, it’s super customizable—use whatever veggies you have on hand! Let this easy dish be your go-to for busy weeknights.


INGREDIENTS

▢ 8 oz warm rice noodles, cooked and drained

▢ 1/2 cup sliced onions

▢ 1 cup each of 5 from this list (snow peas, asparagus, carrot strips, green and red peppers, broccoli flowerets, cauliflower, zucchini, mushrooms)

▢ 1/2 cup chopped chives or scallions

▢ 1 chopped jalapeno or hot pepper of choice (optional)

▢ Salt and pepper

Sauce:

▢ 2/3 cup low sodium soy sauce or tamari 

▢ 1/2 cup date syrup

▢ 4 tsp. grated fresh ginger

▢2 tsp. cornstarch

 

METHOD

1.      Cook and drain rice noodles.

2.      Cook next 5 items in large skillet over medium heat until cooked to retain some "crisp".

3.      While cooking vegetables cook sauce ingredients in medium saucepan until thickened (5 min). I make a double recipe of the sauce for extra pizzaz.

4.      Add to Veggie mix. Add cooked rice noodles. Season with pepper.

5.      I like to sprinkle with some chili flakes and when Bri is feeling he needs "more" (90% rule) I will add Beyond's Tri Tip Bites (just cook them right out of the freezer in a separate pan and throw them in).
