Dark Roasted Peanut Butter

Ever read the label on your peanut butter and wonder why all those additives are in there? Spoiler: they aren’t necessary! Once you try this homemade peanut butter, you won’t be able to get enough. Spread it on whole wheat sourdough toast for a breakfast that keeps you going. We love it so much; we make a double batch every time! Just be sure to roast and grind in single recipe batches for the best results. Enjoy!

Sea salt to taste


Directions

  1. Heat oven to 350 degrees F. If you have an air bake option, it works great.

  2. Spread peanuts on a cookie tray in the middle of the oven and bake for 20 minutes for light roast and 30 minutes for dark roast (try this once at least, it’s my favorite). Turn peanuts after 15 minutes and then periodically. Peanuts will get to dark and burn quickly. Remove from oven and salt peanuts.

  3. Place peanuts into food processor. I use my 9 cup Kitchenaid food processor that grinds all 4 cups at one time. Grind on high speed, turning processor on and off to avoid overheating, cleaning the sides of the bowl when needed until it turns into peanut butter. It will go through stages from a powdery grind to butter eventually, about 10 minutes. Stop when you have the crunch you desire.

Why Do I Love These?

I love this big bag of peanuts to make my own peanut butter or to roast and salt for snacking.  Since we don’t use butter on toast anymore, peanut butter has become a necessity, and nothing compares to the dark roasted fresh flavor of homemade with no additives. 

I love this food processor because it is a tough work horse.  I make peanut butter regularly and that requires 10 minutes of grinding, but it handles the job.  The 9-cup bowl is big enough to handle any volume I’ve needed or wanted to process without being so big that it takes up more room on the counter or is clunky.  All the blades store inside it and it’s easy to clean.  I use the food processor for those things that I will be spooning out and the blender for things that will pour out.
