Microgreens, Tiny Greens, Mighty Benefits

I recently discovered the magic of microgreens, and let me tell you, it’s a nutrient-packed game-changer! These tiny but mighty greens have 40% more nutrients than their fully grown versions. Talk about a power boost!

Microgreens are basically baby veggies and herbs, harvested just a couple of weeks after sprouting. My top two favorites to grow (on repeat!) are arugula for its zesty kick and kale. Not a kale fan? You might surprise yourself with these tender, nutrient-dense leaves. They’re still young, so they haven’t developed that strong “kale” taste—just all the good stuff, like antioxidants that help protect your cells from damage.

You can grow microgreens from almost any herb or veggie. It’s fun to experiment, and trust me, once you start, you’ll get hooked! Below are my top picks to try first.

How do I use microgreens?

The better question is: How don’t I use them?! They’re perfect in salads, sandwiches, smoothies, and as garnishes for soups, pizzas, and pastas. Basically, if I can add them to a dish, I will. It's an easy way to sneak all those extra nutrients into my meals, and I love knowing that my food is not only tastier but healthier too.

How I Grow My Microgreens:

Buying a microgreens kit has been a total game changer for me! Not only are store-bought microgreens pricey (and not always easy to find), but they’re never as fresh as the ones I grow myself. With this kit, I can have my own batch ready in just 5–6 days!

What’s even better? We keep munching on them for longer by adding a bit of water to keep them going. After about a week, we harvest whatever’s left, store it in the fridge, and start the process all over again. Our goal? To enjoy a tray of fresh microgreens every single week! It’s fun, easy, and so satisfying and nutritious.

Once I used up the seeds from the starter kit, I ordered some mats and arugula and kale seeds to keep the microgreen magic going! It’s been so easy to continue growing these nutrient-packed little plants. Plus, I’ve started experimenting by adding a few extra seeds here and there for a thicker lush crop and even mixing seeds. It’s all part of the fun—tweaking the process and watching those greens flourish even more each time!

Do yourself a favor and make this a part of your WFPB program! For nutrient's sake!

I love these because - my microgreens and vegetables stay fresh longer in the refrigerator when you use the insert that allows air movement all around! And it's just so easy to organize them all.
