Avocado Toast

Imagine the creamy, buttery delight of avocado toast getting a fresh, tangy twist with zesty pomegranate arils and a pop of green from microgreens. It’s like a brunch party on your plate, where every bite is a cheerful burst of flavor and color.












Ingredients

▢ 6 slices whole grain bread

▢ 2 medium ripe avocados

▢ 1 Tbsp. fresh lemon or lime juice

▢ 1 tsp. cumin

▢ 1/2 tsp. red pepper flakes (optional)

▢ sea salt and pepper to taste

▢ 2 tsp. minced fresh jalapeno (optional)

▢ Sliced tomatoes (optional)

▢ Microgreens

▢ Arugula

▢ 1 cup pomegranate arils


Directions

  1. Toast bread.

  2. In small bowl mash the avocado.

  3. Add the lemon or lime juice, cumin, red pepper flakes, salt and pepper and mix well. Stir in minced jalapeno.

  4. Spread avocado mixture over the toast.

  5. Lay tomato slices over the avocado mixture. Sprinkle with arugula, microgreens and pomegranate arils.
